增長見聞時間:IH是什麼?
IH,原文是induction heating,意思是誘導發熱。藉由電流通過時產生的磁性,影響可導磁的鍋具,使鍋具自體發熱,進而加熱鍋內食物。透過電流磁力線發熱的鍋具,可以產生較高的溫度,換句話說,就是加熱火力比較大。因此市面上瓦數高的電磁爐,及IH電子鍋,都能提供鍋內食物較好的加熱效果。(節錄自鍋寶好食光)

廚娘題外話:老實說一開始看到鍋邊沒做把手,還擔心厚釜鍋會燙怎麼拿起勒!但廚娘發現鍋寶IH智能定溫電子鍋煮好食物後,其實鍋子邊緣並不會很燙,雖然我用了防燙夾拿出鍋寶電子鍋,但之後我再也沒拿防燙夾出來使用了,因為廚娘有練鐵砂掌

哇黑屁股!廚娘發現標準米飯模式不適合來烤蛋糕,雖然表面多了一層黑殼,但是蛋糕內是很濕潤很好吃,我把黑屁股的殼用鋸齒刀除掉,它還是一個漂亮的斑馬紋蛋糕!
廚娘做美食時很有實驗精神的,下次要試試用設定溫度的方式來做蛋糕,看是否能改善黑屁股的問題![]()

廚娘覺得這樣的混合米量,加入5杯水用標準米飯煮法,煮出來的米飯會更剛好喔!
(廚娘小叮嚀:除了穀類需要加的水量需增加外,很多媽媽應該有發現為什麼每次買的米和加的水量都是一樣,可是煮出來就是不一樣勒!原因就出在白米也有新舊米之分,還有重要的一點來了,新米也會因為當時天氣好壞,當白米收成時含水量也會不同!像廚娘這次買的池上米雖然是新米,但種植期間雨下的少,收成後白米含水量相對會比一般新米少些,所以煮的時候就需要多加一點水,這樣煮出來的米飯才不會太乾喔)

1小時燉湯模式結束後,此時排骨已熟了但湯汁很多
再次蓋上鍋蓋,功能選擇快煮米飯模式,設定20至30分鐘收湯汁
(廚娘家喜歡將湯汁淋在飯上,所以不會把湯汁收得很乾,這剩下的湯汁連拌麵都很好吃

廚娘發現這次使用鍋寶IH智能定溫電子鍋做這道紅燒排骨,比用一般鍋子烹煮出來的排骨肉還要軟還要入味耶,重點是用手指按一按又不用顧爐火,還能利用這1小時的時間做其他菜或是幫小孩洗澡!因為廚娘曾經做這道菜時離開去幫小孩洗澡,下樓後這道菜差點變成炭焦排骨![]()
